Grilled In a Minute: Inspired by Lebanese home cooking, Chef Ahmad Moussa brings the traditions of Beirut, adds some amazing twists, and presents his creations in Al Terrace Lebanese Lounge at Al Mirqab Boutique Hotel situated in Souk Waqif.


What do you like best about being a chef in Souk Waqif ?

Souk Waqif is such a unique place with its own very special views of Doha, and we have in our restaurant traditional offers and service but what is special is that some of our offers cannot be found anywhere else – so by coming to our restaurant you can be sure of a unique experience.

How important is it to cater for special diets and to offer healthy options?

Lebanese cuisine can be very healthy and we have special healthy options. Guests can also request off-the-menu dietary requirements, and so we are happy to always accommodate all.

What are the most important ingredients of Lebanese cuisine?

There are many including a lot of olive oil, garlic and onion, herbs such as thyme, parsley and coriander.

How does the ambience of Al Terrace restaurant – the traditional lamps and live music – add to the dining experience?

We enjoy catching our guests’ attention by offering them a great experience: the band and the food combine together to create a unique experience.

Who has inspired you the most in your career?

My mum – for sure! I love her food and also my grandma’s style of cooking. It’s not the way we cook now – we follow the traditions but we add our own touch. We follow the old style but we also use our creativity.

What are your favourite dishes to cook – or to eat?

A fish dish that is not too spicy from Beirut. It is the taste of Lebanon in one dish. Brown rice, cooked with fish stock with Hammour fish on top – although it can be any fish.

What or who inspired you to become a chef ?

I worked with top chefs in Dubai and Bahrain before I came to Doha and it was an Italian chef who inspired me to do something different – something very different and unique, combining Arabic and International cuisine.

How much do you adapt traditional recipes to make your own versions of Levantine cuisine?

There are many Lebanese restaurants but we are going upwards – our recipes and the presentation are unique and special. Our dishes are colourful and the taste takes you to a different place. For example, we add truffle oil to our Hummus, which is a lovely combination – the best experience ever.
